  • 2 medium apples, chopped Can be sweet or tart.

Preparation
  1. Season the beef chuck roast generously with salt and pepper.
Cooking
  1. Heat olive oil in a large pot over medium-high heat. Sear the beef for about 4-5 minutes on each side until browned.
  2. Remove beef and set aside. Sauté sliced onions for about 5 minutes until soft, then add minced garlic and stir for another minute.
  3. Pour in the apple cider and scrape up any browned bits from the bottom of the pot. Bring to a gentle simmer.
  4. Return beef to the pot, add chopped apples, thyme, and bay leaf. Cover and reduce heat to low, braising for about 3 hours.
  5. After 3 hours, remove beef, discard bay leaf, and adjust seasonings if necessary. Slice the beef and serve with apples and onions.

Notes

For a smooth sauce, don't worry about lumps initially; they're full of flavor! Consider serving with creamy mashed potatoes or egg noodles for a complete meal.
