Preparation
- Season the beef chuck roast generously with salt and pepper.
Cooking
- Heat olive oil in a large pot over medium-high heat. Sear the beef for about 4-5 minutes on each side until browned.
- Remove beef and set aside. Sauté sliced onions for about 5 minutes until soft, then add minced garlic and stir for another minute.
- Pour in the apple cider and scrape up any browned bits from the bottom of the pot. Bring to a gentle simmer.
- Return beef to the pot, add chopped apples, thyme, and bay leaf. Cover and reduce heat to low, braising for about 3 hours.
- After 3 hours, remove beef, discard bay leaf, and adjust seasonings if necessary. Slice the beef and serve with apples and onions.
Notes
For a smooth sauce, don't worry about lumps initially; they're full of flavor! Consider serving with creamy mashed potatoes or egg noodles for a complete meal.
