Ingredients
  

For the Filling
  • 3 cups fresh spinach, chopped Can substitute with kale or Swiss chard.
  • 4 oz goat cheese, crumbled Can substitute with feta or ricotta.
  • 1 small onion, finely chopped Adds flavor to the filling.
  • 2 tablespoons olive oil For sautéing.
  • Salt and pepper to taste Seasoning for the filling.
  • fresh herbs (like dill or parsley) Optional for extra flavor.
For the Pastry
  • 1 package brick pastry Available at grocery stores or international markets.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Toss in the spinach and cook just until wilted, about another 2 minutes. Season with salt and pepper, then let this mixture cool slightly.
  3. In a bowl, combine the cooled spinach mixture with the crumbled goat cheese and any fresh herbs you might have.
Assembly
  1. Unroll the brick pastry sheets and cut them into strips about 4-6 inches wide.
  2. Place a spoonful of the spinach and goat cheese filling at one end of each strip of pastry. Roll tightly, tucking in the sides as you go.
Baking
  1. Place the cigars on a lined baking sheet and brush lightly with olive oil. Bake in the preheated oven for about 15-20 minutes, or until crispy and golden.
Serving
  1. Let the cigars cool for a few minutes, then serve warm. They can be enjoyed on their own or with a light dipping sauce.

Notes

Do not worry if your cigars look a little lumpy — the crunch of the pastry will make up for any imperfections. Leftover filling can be added to an omelet or tossed with pasta.
