Ingredients
  

Main Ingredients
  • 1 cup brown rice Use medium or long grain for best texture.
  • 1 can (15 oz) black beans, rinsed and drained Canned beans save time; you can use frozen too.
  • 1.5 cups vegetable broth Water can be used in a pinch.
  • 1 lime, juiced and zested Adds a fresh zing to the dish.
  • 1 cup fresh cilantro, chopped Reserve some for garnishing.
  • 1 tablespoon olive oil For added flavor.
  • 0.5 teaspoon cumin Gives a warm, earthy flavor.
  • Salt and pepper to taste Adjust according to preference.

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the brown rice and vegetable broth (or water).
  2. Bring the mixture to a boil over medium heat. Once bubbling, reduce the heat to low, cover, and let it simmer for about 30-35 minutes.
Preparing the Flavor
  1. While the rice is cooking, in a large mixing bowl combine the rinsed black beans, lime juice, lime zest, olive oil, cumin, and half of the chopped cilantro.
  2. Stir well to combine.
Combining and Serving
  1. Once the rice is cooked and fluffy, take it off the heat and let it sit for a few minutes.
  2. Fold the rice into the black bean mixture carefully to avoid mashing the beans.
  3. Season with salt and pepper to taste, and garnish with remaining cilantro before serving.

Notes

Customize with diced bell peppers or corn. For added heat, try hot sauce or jalapeƱos. Leftovers keep well for 3-4 days in an airtight container.
