- In a bowl, combine lime juice, cilantro, minced garlic, cumin, salt, and pepper. Add the shrimp and toss to coat. Allow this marinated goodness to sit for about 15 minutes while you prepare the salsa.
Making the Pineapple Salsa
- In another bowl, mix together the diced pineapple, red onion, jalapeño (if using), cilantro, and lime juice. Season with salt and pepper to taste.
Grilling the Shrimp
- Preheat your grill (or grill pan) to medium-high heat. Drizzle olive oil on the grill grates to prevent sticking.
- Thread the shrimp onto skewers. Grill the shrimp for about 2-3 minutes per side or until they turn pink and opaque.
Serving
- Plate your shrimp and top with the pineapple salsa. Serve with extra lime wedges.
Notes
A rustic salsa is a happy salsa. If you can't find fresh pineapple, canned will work in a pinch. Serve it over rice or with warm tortillas for a complete meal.
