Ingredients
  

For the Waffle Batter
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk Can substitute with almond milk or buttermilk.
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
For the Cinnamon Filling
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup melted butter
For the Cream Cheese Icing
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your waffle maker.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, milk, melted butter, and vanilla extract until well combined.
  4. Gradually pour the wet ingredients into the bowl of dry ingredients and stir until just combined.
  5. In a separate bowl, combine brown sugar, ground cinnamon, and melted butter for the filling.
Cooking
  1. Grease your waffle maker lightly.
  2. Pour about 1/2 cup of batter into the waffle maker, then drizzle around 2 tablespoons of the cinnamon filling over the top.
  3. Add another 1/2 cup of batter on top and close the lid. Cook until golden brown (about 3-5 minutes).
Serving
  1. While the waffles are cooking, prepare the cream cheese icing by beating together softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
  2. Once cooked, remove the waffles and repeat the process with the remaining batter.
  3. Drizzle with cream cheese icing and add optional toppings like pecans or fresh fruit.

Notes

Don’t worry if some cinnamon goodness leaks out during cooking; it adds to the deliciousness! These waffles freeze beautifully for a quick breakfast later. Feel free to add chocolate chips or nuts for variety.
