Ingredients

For the Rolls
  • 4 cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast 1 packet
  • 1 cup warm milk about 110°F
  • ½ cup granulated sugar
  • ¼ cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
For the Filling
  • ½ cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup walnuts chopped
For the Cream Cheese Frosting
  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk for thinning, if needed

Method

Preparation
  1. In a large bowl, combine warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5 minutes until frothy.
  2. Add melted butter, eggs, salt, and vanilla extract. Gently stir until combined.
  3. Gradually add the flour, one cup at a time, until a soft dough forms.
Kneading and Rising
  1. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  2. Place the dough in a greased bowl, cover it, and let it rise in a warm spot for about 1 hour or until doubled in size.
Filling Preparation
  1. While the dough is rising, mix together the brown sugar, cinnamon, and chopped walnuts in a small bowl.
Rolling and Baking
  1. Once the dough has risen, roll it out into a rectangle (about 16×12 inches).
  2. Spread the filling mixture evenly over the dough.
  3. Roll tightly from the long end and slice into 12 equal pieces.
  4. Preheat your oven to 350°F (175°C). Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.
  5. Bake for 25-30 minutes, or until golden brown.
Frosting
  1. While the rolls are baking, whip together the softened cream cheese and butter until smooth.
  2. Gradually beat in the powdered sugar and vanilla. Add milk, if needed, for desired consistency.
Serving
  1. Once the rolls are out of the oven and have cooled slightly, spread the cream cheese frosting generously over the top.

Notes

Don't rush the rise. Allowing the dough to rise properly is key. You can use different nuts or add raisins for flavor. These rolls can be assembled the night before and stored in the fridge.
