Ingredients
  

For the Cheesecake
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 zest of 1 lemon and 1 orange
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
For the Topping
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey or maple syrup (optional) Depending on sweetness preference
  • Additional citrus zest for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy. Add sugar, vanilla extract, and mix until well combined.
  3. One at a time, add the eggs into the mixture. Then, stir in the lemon and orange zest along with the citrus juices.
  4. Pour the cheesecake batter into a greased 9-inch springform pan.
Baking
  1. Bake for 35-40 minutes, or until the top is beautifully browned.
  2. Turn off the oven and let it cool inside for about an hour.
Chilling and Serving
  1. After cooling, refrigerate the cheesecake for at least 4 hours before serving.
  2. When ready to serve, toss your mixed berries with honey or maple syrup, and spoon them on top of the cheesecake. Finish with extra citrus zest.

Notes

Letting the cheesecake cool and chill makes it creamy. You can substitute cream cheese with ricotta or mascarpone for a different texture. If it cracks during baking, cover it with berries for some charm.
