Ingredients
  

For the Marinade
  • 1/4 cup orange juice freshly squeezed is best
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey for that hint of sweetness
  • Salt and pepper to taste
For the Scallops
  • 1 lb fresh scallops
  • Chopped fresh parsley for garnish

Method
 

Marination
  1. In a bowl, combine the orange juice, lemon juice, olive oil, honey, salt, and pepper. Add the scallops to the mix, making sure they are well coated. Let these beauties marinate for about 20 minutes.
Cooking
  1. While your scallops are marinating, heat a non-stick skillet over medium-high heat.
  2. Once hot, add a splash of olive oil. Remove the scallops from the marinade and place them in the pan. Sear the scallops for about 2-3 minutes on each side until they are golden brown.
  3. After searing, pour the saved marinade into the hot skillet and let it bubble for a minute or two.
  4. Plate your scallops, drizzle with the marinade, and sprinkle that freshly chopped parsley on top.

Notes

For best results, do not overcrowd the pan to allow for proper searing. Consider adding garlic or ginger to the marinade for extra flavor. Store any leftovers in an airtight container in the fridge for up to two days.
