Ingredients
  

Salad Ingredients
  • 4 large ripe tomatoes, diced
  • 1 unit cucumber, peeled and chopped
  • 1 unit red onion, thinly sliced
  • 1 unit green bell pepper, chopped (or red for a sweeter touch)
  • 1 cup Kalamata olives, pitted and halved
  • 8 ounces feta cheese, crumbled (or cubed)
Dressing Ingredients
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Method
 

Preparation
  1. Dice the tomatoes, chop the cucumber, slice the onion, and chop the bell pepper.
Mixing
  1. In a large salad bowl, toss together the tomatoes, cucumber, onions, bell pepper, and olives.
Dressing the Salad
  1. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  2. Pour the dressing over the salad and gently toss everything together.
Serving
  1. Sprinkle the crumbled feta cheese on top, and give it one last light toss or leave it on top for presentation. Serve fresh.

Notes

This salad can be made ahead of time; just keep the dressing separate until serving. Add protein like grilled chicken or chickpeas for a hearty meal.
