Ingredients
  

Salad Ingredients
  • 2 cups fresh or frozen peas No judgement if they come from a bag!
  • 1 cup diced cheddar cheese The sharper, the better!
  • 1 cup diced bell pepper Any color will do to brighten things up.
  • ½ cup red onion, finely chopped Adds a flavorful kick!
Dressing Ingredients
  • 1 cup mayonnaise Greek yogurt can be used for a lighter twist.
  • 2 tablespoons apple cider vinegar Provides that Southern zing!
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. In a large bowl, toss together the peas, cheddar cheese, bell pepper, and red onion.
  2. In another bowl, whisk together the mayonnaise and apple cider vinegar until smooth.
  3. Pour the dressing over the veggie and cheese mix, stirring gently to coat everything evenly.
  4. Sprinkle in salt and pepper to taste.
  5. Cover the bowl with plastic wrap and let it chill in the fridge for at least an hour.
  6. Serve your salad in a lovely dish or right from the bowl.

Notes

Add some chopped celery or nuts for added crunch. Substitute white wine vinegar if apple cider vinegar isn't available. If the dressing is too thick, add a splash of water.
