- In a large bowl, toss together the peas, cheddar cheese, bell pepper, and red onion.
- In another bowl, whisk together the mayonnaise and apple cider vinegar until smooth.
- Pour the dressing over the veggie and cheese mix, stirring gently to coat everything evenly.
- Sprinkle in salt and pepper to taste.
- Cover the bowl with plastic wrap and let it chill in the fridge for at least an hour.
- Serve your salad in a lovely dish or right from the bowl.
Notes
Add some chopped celery or nuts for added crunch. Substitute white wine vinegar if apple cider vinegar isn't available. If the dressing is too thick, add a splash of water.
