  • 3 cups green peas (fresh or frozen)
  • 1 cup diced cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste

Preparation
  1. If you’re using fresh peas, blanch them in boiling water for 2-3 minutes before cooling them in an ice bath. If using frozen peas, let them thaw completely.
  2. In a large bowl, combine your green peas, cheddar cheese, and diced red onion.
  3. In a separate small bowl, whisk together the mayonnaise, sugar, apple cider vinegar, salt, and pepper until smooth and creamy.
  4. Pour the dressing over the pea mixture and toss gently until well combined.
  5. Cover and refrigerate for at least 30 minutes to let the flavors enhance.
Serving
  1. Before serving, sprinkle crispy bacon pieces or chopped hard-boiled eggs on top for extra flair.

Notes

Fresh peas can take a bit more time, but frozen peas work just as well. Customize with additional ingredients like pimentos or olives. This salad gets better the longer it sits in the fridge. Can be made a day ahead.
