Preparation
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to about 1/2 inch thick.
- Set up your breading stations: one for flour mixed with salt and pepper, one for beaten eggs, and one for breadcrumbs and Parmesan.
Cooking
- Coat each piece of chicken in flour, dip it into the egg, and cover it with the breadcrumb-Parmesan mix.
- Heat olive oil in a large skillet over medium heat and pan-fry the breaded chicken breasts for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for another 15-20 minutes.
Serving
- Let the chicken rest for a few minutes, then serve with marinara sauce and a sprinkle of fresh basil.
Notes
For a twist, sprinkle Italian seasoning into the breadcrumb mixture. If you prefer, substitute the marinara with Alfredo or pesto.
