Cooking the Steak
- Season the flank steak with salt and pepper. In a skillet over medium-high heat, cook the steak for about 4-5 minutes on each side, depending on your desired doneness.
- Once cooked, let it rest for a few minutes before slicing it thinly.
Preparing the Eggs
- In the same skillet, reduce the heat to medium and add the butter.
- Crack in the two eggs and cook them sunny side up or over-easy, allowing the yolks to remain slightly runny.
Toasting the Bagels
- While the steak and eggs are cooking, slice the bagels and toast them until golden brown.
- Optionally, spread a little butter on them for extra flavor.
Assembling the Bagels
- Take one half of a bagel, place a slice of American cheese on the bottom, followed by the sliced steak, the cooked egg, and then another slice of cheese on top.
- Add ketchup or hot sauce if desired, and cap it off with the other half of the bagel.
Heating Up
- To melt the cheese, microwave the assembled bagel for about 20-30 seconds or place it back in the skillet to warm it up quickly.
Notes
Feel free to substitute any tender cut of steak. For a different flavor, swap American cheese for cheddar or pepper jack. If you're allergic to eggs, consider using scrambled tofu as a replacement.
