Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups peeled and chopped apples Granny Smith suggested for tartness.
For the Topping
  • 0.5 cups brown sugar
  • 2 tsp cinnamon
  • 0.5 cups powdered sugar For frosting.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish or line with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In another bowl, beat the eggs with the granulated sugar until nicely blended. Gradually stir in the melted butter and vanilla extract.
  4. Gradually fold the dry mix into the wet mixture until just combined, being careful not to overdo it.
  5. Gently fold in the chopped apples until they're well distributed throughout the batter.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Sprinkle the brown sugar and cinnamon topping evenly over the batter.
  3. Bake for around 30-35 minutes, or until a toothpick comes out clean.
  4. Allow to cool before drizzling the powdered sugar frosting, if desired.

Notes

Try adding walnuts or pecans for crunch or raisins for sweetness. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months.
