Preparation
- Season the cube steaks with salt and pepper.
- Set up a dredging station with one bowl containing flour mixed with paprika and seasoning, and another bowl with beaten eggs and buttermilk.
- Coat each steak by dipping it into the flour mixture, then the egg mixture, and again into the flour.
Cooking
- Heat about half an inch of vegetable oil in a large skillet over medium heat.
- Fry the steaks for about 3-4 minutes on each side until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.
- In the same skillet, use the pan drippings to make the gravy: add flour, stirring constantly until golden brown.
- Gradually whisk in the milk and bring to a simmer until it thickens, about 3-5 minutes.
- Season the gravy to taste with salt and pepper.
Serving
- Plate the fried steak and generously ladle gravy on top. Serve with mashed potatoes or greens.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
