Ingredients
  

For the Fried Steak
  • 4 pieces cube steak Can substitute with other cuts, adjusting cooking time as needed
  • 1 cup all-purpose flour For dredging
  • 1 teaspoon paprika Adds flavor and color
  • to taste Salt and pepper For seasoning
  • 2 pieces eggs Beaten, for coating
  • 1 cup buttermilk Or milk with a squeeze of lemon
  • as needed cups Vegetable oil For frying
For the Gravy
  • 2 tablespoons pan drippings From frying the steak
  • 2 tablespoons all-purpose flour For thickening the gravy
  • 2 cups milk
  • to taste Salt and pepper For seasoning

Method
 

Preparation
  1. Season the cube steaks with salt and pepper.
  2. Set up a dredging station with one bowl containing flour mixed with paprika and seasoning, and another bowl with beaten eggs and buttermilk.
  3. Coat each steak by dipping it into the flour mixture, then the egg mixture, and again into the flour.
Cooking
  1. Heat about half an inch of vegetable oil in a large skillet over medium heat.
  2. Fry the steaks for about 3-4 minutes on each side until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.
  3. In the same skillet, use the pan drippings to make the gravy: add flour, stirring constantly until golden brown.
  4. Gradually whisk in the milk and bring to a simmer until it thickens, about 3-5 minutes.
  5. Season the gravy to taste with salt and pepper.
Serving
  1. Plate the fried steak and generously ladle gravy on top. Serve with mashed potatoes or greens.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
