  • 1/2 cup unsalted butter, melted or slightly softened if you prefer a thicker dip
  • 1/4 cup mayonnaise adds creaminess and body
  • 1 tablespoon fresh lemon juice about half a lemon
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons Dijon mustard or stone-ground mustard
  • 3 cloves garlic, minced or 1½ teaspoons garlic powder
  • 1 tablespoon fresh parsley, finely chopped or 1 teaspoon dried
  • 1 tablespoon fresh chives, chopped optional, but pretty
  • 1/2 teaspoon smoked paprika gives that western vibe
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt more to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro for a bright twist, optional

Method
 

Preparation
  1. Mince the garlic and chop the parsley and chives.
  2. Melt the butter gently in a small saucepan over low heat, or microwave in short bursts until just melted.
  3. In a medium bowl, whisk together the mayonnaise, lemon juice, Worcestershire, and Dijon until smooth.
  4. Slowly whisk in the warm melted butter in a thin stream.
  5. Stir in the garlic, parsley, chives, smoked paprika, cayenne, onion powder, salt, and pepper. Taste and adjust.
  6. Let it rest for 5–10 minutes so the flavors marry.
  7. Serve alongside shrimp, grilled steak, roasted potatoes, or crusty bread.

Notes

If serving warm, transfer to a small bowl and keep it loosely covered. Refrigerate for about 30 minutes for a chilled spread. Can be made ahead and stored in an airtight container for up to 3 days.
