  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 medium bell pepper, diced (any color you like)
  • 1 medium zucchini, sliced into rounds
  • 1 medium red onion, chopped into chunks
  • 2 tablespoons olive oil
Seasonings
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper

  • as needed skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling.

Preparation
  1. If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning.
  2. In a large bowl, combine chicken pieces with olive oil, chili powder, garlic powder, paprika, and a generous pinch of salt and pepper. Mix until chicken is fully coated and let marinate while preparing the veggies (15-30 minutes).
Assembly
  1. Starting with a chicken piece, alternate threading the chicken, bell pepper, zucchini, and red onion onto the skewers until filled.
Cooking
  1. Preheat your grill or oven to medium-high heat.
  2. Grill the skewers for about 10-12 minutes, turning occasionally for even cooking. If using an oven, place skewers on a lined baking sheet and bake at 400°F for about 15-20 minutes, or until chicken is cooked through.
Serving
  1. Remove the skewers from heat and let rest for a couple of minutes before serving.
  2. Serve with your favorite dipping sauce, or enjoy them on their own.

Notes

Feel free to add more veggies like mushrooms, cherry tomatoes, or corn. Try seasoning with cumin or oregano for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
