Preparation
  1. Wash the cabbage and chop it into bite-sized pieces. Slice the carrots and dice the onion.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onions and sauté until soft and translucent—about 4-5 minutes.
  3. Add the garlic and sauté for an additional minute.
  4. Toss in the chopped cabbage and carrot slices, stirring well.
  5. Mix in the diced tomatoes, paprika, thyme, salt, and pepper.
  6. Simmer over medium-low heat for about 20 minutes, or until the cabbage is tender.
Serving
  1. Sprinkle cheese on top before serving, if desired.
  2. Serve hot in bowls and enjoy with some crusty bread if available.

Notes

Keep an eye on the cabbage while cooking to avoid it becoming too mushy. Feel free to swap in seasonal veggies or add a dash of hot sauce for a kick. Skipping the cheese can keep the dish lighter if preferred.
