Ingredients
  

Cheese Base
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
Main Ingredients
  • 1 can diced tomatoes with green chilies, undrained
  • 1 cup cooked crab meat
  • 1 cup cooked shrimp, chopped
  • 2 cloves garlic, minced
  • 1 tsp lime juice
Seasoning
  • Salt and pepper to taste
Garnish
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. In a medium saucepan over medium heat, melt the cream cheese until it’s nice and creamy, stirring occasionally.
  2. Gradually add the shredded cheddar and Monterey Jack cheeses, stirring until melted and smooth.
  3. Mix in the diced tomatoes (juices and all), crab meat, shrimp, garlic, and lime juice until well coated.
  4. Reduce heat to low, allowing it to simmer for about 5-10 minutes to blend the flavors.
  5. Transfer to a serving bowl, garnish with fresh cilantro if desired, and serve warm.

Notes

For an ooey-gooey cheese pull, let your queso cook slowly on low heat. Make it ahead and refrigerate before reheating. Consider adding jalapeños or black beans for additional flavors.
