- In a medium saucepan over medium heat, melt the cream cheese until it’s nice and creamy, stirring occasionally.
- Gradually add the shredded cheddar and Monterey Jack cheeses, stirring until melted and smooth.
- Mix in the diced tomatoes (juices and all), crab meat, shrimp, garlic, and lime juice until well coated.
- Reduce heat to low, allowing it to simmer for about 5-10 minutes to blend the flavors.
- Transfer to a serving bowl, garnish with fresh cilantro if desired, and serve warm.
Notes
For an ooey-gooey cheese pull, let your queso cook slowly on low heat. Make it ahead and refrigerate before reheating. Consider adding jalapeños or black beans for additional flavors.
