  • 1 lb large shrimp, peeled and deveined
  • 2 cups shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1 cup diced tomatoes with green chilies (like Rotel)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder

  1. In a big skillet over medium heat, add a splash of olive oil. Toss in the onions and bell peppers, cooking until they’re soft and fragrant—about 3-5 minutes. Add the garlic and let it go for another minute.
  2. Gently fold in the crab meat and shrimp. Season with chili powder, salt, and pepper. Cook until the shrimp turn pink—about 3-4 minutes. Be careful not to overcook them; no one likes a rubbery shrimp!
  3. Lower the heat and stir in the cream cheese until it’s fully melted and combined. Then mix in the diced tomatoes. Finally, sprinkle in the cheddar cheese and let it melt into a gooey, cheesy masterpiece.
  4. Once the cheese has melted and everything is combined, serve hot, garnished with fresh cilantro if you like.

Notes

Tailor it to your taste by swapping shrimp for chicken or using more crab. If you love to entertain, consider doubling the recipe. Don't stress if your queso looks a little lumpy; it's all part of the magic!
