Ingredients
  

Cheeses
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup brie cheese, sliced (with or without the rind)
Bread
  • 4 slices your favorite bread (sourdough or whole wheat recommended)
Cranberry Sauce
  • ½ cup cranberry sauce (store-bought or homemade)
Butter
  • 2 tablespoons butter, softened
Seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Gather all ingredients for easy access while cooking.
Assembly
  1. Spread softened butter on one side of each slice of bread.
  2. On the non-buttered side of two slices, layer brie, fresh mozzarella, and cranberry sauce, then sprinkle with salt and pepper.
  3. Top with the other bread slices, buttered side up.
Grilling
  1. Heat skillet over medium heat and place the sandwich in the skillet.
  2. Press down gently with a spatula and cook for about 3-4 minutes until golden brown.
  3. Flip and repeat on the other side until cheese is melty.
Serving
  1. Remove from skillet, slice in half and serve immediately while warm.

Notes

For extra crispiness, use a panini press. This recipe is great for utilizing leftover cranberry sauce or trying it with cranberry jam for a sweeter twist.
