Ingredients
  

For the Sandwich
  • 4 slices slices of your favorite bread (sourdough, brioche, or whole grain)
  • 4 ounces creamy Brie cheese, sliced
  • 4 ounces fresh mozzarella cheese, sliced
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 2 tablespoons unsalted butter, softened
  • Salt and pepper to taste
  • Optional: fresh arugula or spinach for an extra crunch

Method
 

Preparation
  1. Spread a thin layer of butter on one side of each bread slice.
  2. On the unbuttered side of two bread slices, layer sliced Brie followed by fresh mozzarella.
  3. Spoon a generous amount of cranberry sauce over the cheese. Optionally, add fresh arugula or spinach.
  4. Top with the other two slices of bread, buttered side facing up.
Cooking
  1. Heat a skillet over medium heat and place the sandwiches in the pan.
  2. Grill for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  3. Remove from skillet, slice in half, and serve immediately with extra cranberry sauce on the side.

Notes

Feel free to mix in different cheeses for variety. If needed, use a non-stick skillet or sandwich press for easier clean-up. Store leftovers in an airtight container in the fridge for up to two days.
