Preparation
- Spread a thin layer of butter on one side of each bread slice.
- On the unbuttered side of two bread slices, layer sliced Brie followed by fresh mozzarella.
- Spoon a generous amount of cranberry sauce over the cheese. Optionally, add fresh arugula or spinach.
- Top with the other two slices of bread, buttered side facing up.
Cooking
- Heat a skillet over medium heat and place the sandwiches in the pan.
- Grill for about 3-4 minutes on each side or until golden brown and the cheese is melted.
- Remove from skillet, slice in half, and serve immediately with extra cranberry sauce on the side.
Notes
Feel free to mix in different cheeses for variety. If needed, use a non-stick skillet or sandwich press for easier clean-up. Store leftovers in an airtight container in the fridge for up to two days.
