Preparation
- Preheat the oven to 375°F (190°C).
- Roll out your thawed puff pastry on a lightly floured surface. Cut it into squares about 3 inches by 3 inches.
- Slice your brie into small pieces, about 1 inch each.
- Place a piece of brie in the center of each puff pastry square, add a spoonful of cranberry sauce on top, and then some fresh thyme if using.
- Fold the corners of the puff pastry over the brie and cranberry sauce, pinching them together. Brush the tops with the beaten egg.
Baking
- Place your bites on a parchment-lined baking sheet and bake for about 15-20 minutes, or until they’re puffed and golden brown.
Notes
Make Ahead: These bites can be assembled a day in advance, just cover them with plastic wrap and refrigerate until ready to bake. Try Different Fillings: Experiment with fig jam or slices of apple for variety. Don’t skip the egg wash for a shiny finish.
