  • 1 sheet puff pastry, thawed
  • 8 ounces wheel of brie cheese
  • 1/2 cup cranberry sauce store-bought or homemade
  • 1 large egg, beaten for egg wash
  • to taste Fresh thyme optional, for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Roll out your thawed puff pastry on a lightly floured surface. Cut it into squares about 3 inches by 3 inches.
  3. Slice your brie into small pieces, about 1 inch each.
  4. Place a piece of brie in the center of each puff pastry square, add a spoonful of cranberry sauce on top, and then some fresh thyme if using.
  5. Fold the corners of the puff pastry over the brie and cranberry sauce, pinching them together. Brush the tops with the beaten egg.
Baking
  1. Place your bites on a parchment-lined baking sheet and bake for about 15-20 minutes, or until they’re puffed and golden brown.

Notes

Make Ahead: These bites can be assembled a day in advance, just cover them with plastic wrap and refrigerate until ready to bake. Try Different Fillings: Experiment with fig jam or slices of apple for variety. Don’t skip the egg wash for a shiny finish.
