Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface.
  2. Slice the puff pastry into squares about 3x3 inches.
Filling
  1. Place a small spoonful of cranberry sauce in the center of each pastry square and add a chunk of brie on top.
Assembly
  1. Fold the corners of the pastry over the filling and pinch them to seal.
  2. Brush the tops with the beaten egg for a golden glaze.
Baking
  1. Place the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes until puffed and golden brown.
  2. Let them cool for a few minutes before serving and garnish with fresh parsley.

Notes

For variations, switch out cranberry sauce for fruit preserves or savory options like caramelized onions. These bites can be made ahead and frozen. Reheat from frozen by adding a few minutes to cooking time.
