  • 1 sheet puff pastry (thawed and rolled out)
  • 8 ounces wheel of brie cheese (cut into small pieces)
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 1 large egg (for egg wash)
  • Fresh rosemary (for garnish, optional)
  • Salt and pepper (to taste)

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Prepare the Pastry: Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 2-inch squares.
  3. Assemble the Bites: Place a small piece of brie in the center of each pastry square and add a spoonful of cranberry sauce on top of the cheese.
  4. Wrap It Up: Fold the corners of the pastry over the filling and pinch to seal. Place seam-side down on a parchment-lined baking sheet.
  5. Egg Wash Time: Beat the egg in a small bowl and brush it over the tops of the pastries.
  6. Bake: Place in the oven for about 15-20 minutes, or until puffed and golden brown.
  7. Garnish: Once out of the oven, sprinkle with salt, pepper, and fresh rosemary.

Notes

You can substitute brie with any soft cheese like cream cheese or goat cheese. Leftovers can be stored in an airtight container in the fridge for up to two days. These bites can also be assembled and frozen before baking.
