Ingredients
  

For the Pastries
  • 1 sheet puff pastry (thawed) Thaw before using.
  • 1 wheel brie cheese
  • 1/2 cup cranberry sauce Canned or homemade.
  • 1 egg beaten For egg wash.
  • to taste salt and pepper
  • to taste fresh thyme For garnishing, optional.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Unroll the puff pastry on a lightly floured surface and cut into squares (about 3x3 inches).
  3. Place a small piece of brie cheese in the center of each pastry square.
  4. Spoon a generous dollop of cranberry sauce over the brie.
  5. Fold the corners of the pastry squares over the filling, pinching to seal them.
  6. Brush the tops of the bites with the beaten egg.
Baking
  1. Place the bites on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden.
  2. Let them cool for a few minutes before serving, and sprinkle with fresh thyme if desired.

Notes

For a creative touch, try using different flavors of jam or a combo of cranberry and orange. These bites are also freezer friendly—assemble ahead of time and freeze before baking.
