Preparation
- Preheat your oven to 375°F (190°C).
- Unroll the puff pastry on a lightly floured surface and cut into squares (about 3x3 inches).
- Place a small piece of brie cheese in the center of each pastry square.
- Spoon a generous dollop of cranberry sauce over the brie.
- Fold the corners of the pastry squares over the filling, pinching to seal them.
- Brush the tops of the bites with the beaten egg.
Baking
- Place the bites on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden.
- Let them cool for a few minutes before serving, and sprinkle with fresh thyme if desired.
Notes
For a creative touch, try using different flavors of jam or a combo of cranberry and orange. These bites are also freezer friendly—assemble ahead of time and freeze before baking.
