Ingredients
  

Pastry Base
  • 1 sheet sheet of puff pastry (thawed)
Filling
  • 8 oz. Brie cheese The star of the show!
  • 1/2 cup cranberry sauce Fresh or store-bought
  • 1 large egg (beaten) For golden hue
  • to taste Fresh thyme leaves Optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into about 3-inch squares.
  3. Place a cube of Brie (about 1 oz.) in the center of each pastry square.
  4. Add a dollop of cranberry sauce on top of the Brie.
  5. Fold the corners of the pastry square over the filling to create pockets.
  6. Brush the tops with the beaten egg for a shiny, golden finish.
  7. Place them on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  8. Sprinkle fresh thyme leaves on top after baking before serving.

Notes

These bites can be made ahead and baked just before serving. Feel free to experiment with toppings like chopped nuts. Don’t worry about imperfections; they’ll taste heavenly!
