- Place a cube of Brie (about 1 oz.) in the center of each pastry square.
- Add a dollop of cranberry sauce on top of the Brie.
- Fold the corners of the pastry square over the filling to create pockets.
- Brush the tops with the beaten egg for a shiny, golden finish.
- Place them on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
- Sprinkle fresh thyme leaves on top after baking before serving.
