Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, unfold the thawed puff pastry and roll to smooth any creases. Cut into 24 pieces using a 2–2.5-inch round cutter.
- Cut the brie into small cubes about 3/4 to 1 inch. Leave the rind on for added flavor.
Assembly and Baking
- Place pastry pieces on the baking sheet. Top each with one brie cube, add 1/2 teaspoon of cranberry sauce on top, and sprinkle chopped nuts if using.
- Beat the egg with the tablespoon of water and brush the edges of the pastry. Bake at 400°F for 12–15 minutes, until golden.
Finishing Touches
- Remove from the oven and let cool for 3–4 minutes. Drizzle lightly with honey and add herb sprigs and a pinch of black pepper if desired. Serve warm.
Notes
Can be assembled and refrigerated for up to 6 hours before baking. Freezing is also possible, add extra baking time for frozen bites. Store leftovers in an airtight container for up to 2 days and reheat in a 350°F oven for 5–8 minutes.
