Puff Pastry Bites Ingredients
  • 1 sheet puff pastry (thawed)
  • 8 oz brie cheese (cut into small pieces)
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 1/4 cup fig jam
  • 1 tbsp fresh thyme leaves
  • 1 large egg (beaten, for egg wash)
  • Flour (for rolling out the dough)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out your puff pastry until it is about 1/8 inch thick. Cut the pastry into 2-inch squares.
  3. Place a small piece of brie in the center of each square. Top with cranberry sauce, fig jam, and thyme.
  4. Gently fold the corners of the pastry over the filling and pinch them shut.
  5. Brush the tops with the beaten egg.
  6. Place on a parchment-lined baking sheet and bake for 15-20 minutes, or until golden.
  7. Let cool slightly before serving.

Notes

You can prepare the pastry bites ahead of time and freeze them before baking. If substituting cheese, goat cheese or cheddar can be used. Add chopped walnuts or pecans for extra texture.
