Ingredients
  

For the salmon
  • 4 pieces salmon fillets, skin on Choose fresh salmon for best flavor.
  • 1 cup fresh cranberries Frozen cranberries can be used as a substitute.
  • 1 large orange, zested and juiced Fresh orange is preferred.
  • 1 large onion, thinly sliced Sweet onions work best.
  • ½ cup sliced almonds Provides a crunchy topping.
  • 2 tablespoons olive oil Divided for sautéing.
  • 2 tablespoons brown sugar Adds sweetness to the sauce.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe skillet, heat 1 tablespoon of olive oil over medium heat.
  3. Add sliced onions and sprinkle with a pinch of salt. Cook slowly for about 10-15 minutes until caramelized and golden brown.
  4. While onions are cooking, crush cranberries in a bowl and mix in orange juice, zest, and brown sugar.
Cooking
  1. Push caramelized onions to the side of the skillet and add another tablespoon of olive oil if needed.
  2. Season salmon fillets with salt and pepper, then place skin-side down in the skillet. Sear for 3-4 minutes until the skin is crispy.
  3. Spoon the cranberry-orange mixture over and between the salmon fillets. Top with caramelized onions and sliced almonds.
  4. Transfer the skillet to the preheated oven and bake for about 12-15 minutes until the salmon is cooked through.
  5. Serve immediately, drizzled with any remaining sauce from the skillet.

Notes

Drizzle leftover sauce over steamed veggies or salad for extra flavor. For a twist, add balsamic vinegar or chili flakes to the sauce.
