Ingredients

Main Ingredients
  • 8 oz cream cheese, softened because who doesn’t love creamy?
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup goat cheese, crumbled adds that tangy goodness!
  • 1/2 cup dried cranberries, chopped sweetness alert!
  • 1/2 cup pecans, finely chopped for that lovely crunch
  • 1/4 cup green onions, chopped freshness is key!
  • 1 teaspoon garlic powder to kick it up a notch
  • 1 tablespoon lemon juice to brighten it up
  • Salt and pepper, to taste
  • Extra pecans and cranberries, for rolling these are for the ultimate garnish

Method

Preparation
  1. Mix all the main ingredients (cream cheese, cheddar, goat cheese, cranberries, pecans, green onions, garlic powder, lemon juice, salt, and pepper) in a large mixing bowl.
  2. Get in there with your hands! Don’t be shy; mix everything together until it’s well combined and you’re not left with any sad, dry cheese clumps.
  3. Shape the mixture into a ball.
  4. Roll your cheese ball in the additional chopped pecans and cranberries until it’s fully coated.
  5. Chill in the refrigerator for at least an hour.
  6. Serve with your favorite crackers or veggies.

Notes

Feel free to add diced jalapeños or a splash of hot sauce for a kick. Store leftovers wrapped tightly in plastic wrap in the fridge for about a week, and consider making ahead to elevate your stress-free game!
