Ingredients
  

Mocktail Ingredients
  • 2 cups unsweetened cranberry juice (or 100% cranberry juice)
  • 1.5 cups pineapple juice (fresh or canned)
  • 0.25 to 0.5 cups simple syrup or honey, to taste Adjust based on sweetness preference
  • 0.25 cups fresh lime juice (about 2 limes)
  • 3 cups sparkling water, club soda, or ginger ale Use for sweetness and fizz
  • Ice (lots of it) Serves best cold
  • Fresh cranberries and pineapple wedges for garnish Optional decor
  • 1-2 cups white rum, vodka, or Malibu rum (optional) For an adult version of the mocktail

Method
 

Preparation
  1. Chill your glasses by placing them in the freezer for 10 minutes.
  2. In a large pitcher, combine the cranberry juice, pineapple juice, and lime juice. Stir well.
  3. Sweeten the mixture by adding simple syrup or honey a little at a time, tasting as you go.
  4. Add ice to the pitcher or fill individual glasses with ice.
  5. Just before serving, gently stir in the sparkling water or club soda to preserve the fizz.
  6. Garnish each glass with fresh cranberries and a pineapple wedge. Optionally, add a rosemary sprig or a lime wheel.
  7. If desired, pour 1-2 ounces of rum or vodka per serving.

Notes

Taste as you go to balance the sweetness. Use cold juices to preserve fizz longer. Make-ahead tips are included for easy preparation.
