Ingredients
  

Chicken and Filling
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries, chopped the kind you snack on when no one's looking
  • 1 cup brie cheese, rind removed and cut into small pieces
Cooking Essentials
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • Toothpicks or kitchen twine for securing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice the chicken breasts horizontally to create a pocket.
  3. In a mixing bowl, combine the chopped spinach, cranberries, and brie cheese. Add salt, pepper, and garlic powder. Mix well.
  4. Generously fill each chicken breast pocket with the cranberry and spinach mixture. Secure with toothpicks or kitchen twine.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Sear each side of the stuffed chicken breasts for about 4-5 minutes until golden brown.
  2. Transfer the seared chicken to a baking dish and bake for about 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  3. Remove toothpicks or twine before serving. Plate the stuffed chicken with greens or roasted veggies.

Notes

You can substitute brie cheese with cream cheese or goat cheese. Leftover stuffing can be used in an omelet or salad.
