  • 1 pound cooked turkey, shredded or chopped
  • 2 cups stuffing mix
  • 1 cup chicken broth Warm broth for mixing
  • 1/2 cup dried cranberries, chopped Adds a burst of flavor
  • 1/2 cup celery, finely chopped
  • 1/4 cup onion, finely chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon sage
  • Salt and pepper to taste
  • 1 large egg, beaten
  • Olive oil For drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded turkey, stuffing mix, chopped cranberries, celery, onion, dried thyme, sage, salt, and pepper. Mix well.
  3. Pour in the warm chicken broth and the beaten egg. Use your hands to mix until everything is combined.
  4. Shape the mixture into small balls (about 1 inch in diameter) and place them on a greased or parchment-lined baking sheet.
  5. Lightly drizzle olive oil over the balls.
  6. Bake for about 20-25 minutes until golden brown.
  7. Let them cool slightly before serving.

Notes

Can be made ahead and refrigerated. Excellent for freezing. If the mixture is too wet, add more stuffing mix. If too dry, a splash of broth can help.
