  • 1 lb ground beef (or turkey) Use turkey for a healthier option.
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup The magic ingredient!
  • 1 cup shredded cheddar cheese Feel free to use extra cheese if desired.
  • 2 cups frozen mixed vegetables Can substitute with veggies on hand.
  • 1 cup cooked rice Leftover rice can be used.
  • Salt and pepper to taste
  • Optional: breadcrumbs For a crunchy topping.

Preparation
  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, brown the ground beef (or turkey) along with the chopped onion. Season with salt and pepper.
  3. Stir in the cream of mushroom soup, cooked rice, and mixed vegetables until everything is well-blended.
  4. Pour the mixture into a greased 9x13 inch casserole dish. Sprinkle cheddar cheese on top and add breadcrumbs if desired.
Baking
  1. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  2. Let it cool for a minute before slicing and serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. You can prepare this casserole the night before and bake it when ready. Freezing is also an option; assemble without baking and freeze.
