Preparation
- Preheat your oven to 375°F (190°C).
- In a large pot of boiling salted water, add the cauliflower florets and cook until fork-tender, about 5-7 minutes.
- Drain the cauliflower and pour it into a large mixing bowl.
- Add in the heavy cream, garlic powder, 1 cup of cheddar cheese, and half the crumbled bacon. Mix until well combined. Season with salt and pepper.
- Pour the cauliflower mixture into a greased baking dish. Spread it evenly and sprinkle the remaining shredded cheddar and bacon on top.
Baking
- Bake for about 25-30 minutes or until the top is bubbly and golden brown.
- Let the dish sit for a few minutes before serving.
- Sprinkle with fresh parsley or chives and serve warm.
Notes
Sauce may look lumpy, which adds charm. For a healthier version, use low-fat cheese or replace half the cream with Greek yogurt. For a vegetarian twist, skip the bacon and add sautéed mushrooms or spinach.
