Ingredients
  

Main ingredients
  • 4 large yellow onions Pick larger onions for best results.
  • 1 cup heavy cream Can substitute with half-and-half or non-dairy milk.
  • 1 cup asiago cheese, grated Feel free to mix with mozzarella and parmesan for variety.
  • 2 tablespoons olive oil Used for sautéing the onions.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • Fresh parsley, chopped for garnish Optional, for garnish.

Method
 

Preparation
  1. Peel the onions and cut them in half. Scoop out some of the center with a spoon to make room for filling.
Sauté
  1. Heat olive oil in a skillet over medium heat. Sauté scooped-out onion bits until soft and golden brown for about 5-7 minutes.
Make the Cream Mixture
  1. In a bowl, mix heavy cream, garlic powder, salt, and pepper with half of the asiago cheese.
Stuff the Onions
  1. Combine sautéed onion bits with the cream mixture. Stuff the mixture back into the onion halves and top with remaining asiago cheese.
Bake
  1. Preheat oven to 375°F (190°C). Place stuffed onions in a baking dish with a splash of water at the bottom. Cover with foil and bake for 30-35 minutes until onions are tender.
Finish Strong
  1. Remove foil for the last 10 minutes of baking for the cheese to become golden and bubbly.
Garnish and Serve
  1. Garnish with fresh parsley before serving. Pair with a salad or crusty bread.

Notes

For best results, use large onions and don't hesitate to customize the cheese used. If the cream mixture looks lumpy, it's part of the texture charm!
