Ingredients
  

For the Onions
  • 4 large large onions (sweet varieties like Vidalia work best)
For the Cheese Sauce
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese Reserve half for topping
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For Garnish
  • to taste Fresh parsley Optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel the onions and slice them in half. Place them cut side up in a baking dish.
Making the Cheese Sauce
  1. In a small saucepan, melt the butter over medium heat.
  2. Add the heavy cream and bring it to a simmer.
  3. Stir in half of the Asiago cheese, all the Parmesan, garlic powder, salt, and pepper. Mix until it’s smooth and creamy.
Assembling and Baking
  1. Pour the creamy cheese sauce generously over the onions.
  2. Cover the baking dish with aluminum foil, and bake for about 30 minutes.
  3. Remove the foil, sprinkle the remaining Asiago cheese on top, and bake for an additional 15-20 minutes until golden and bubbly.
Garnishing
  1. Once the dish is bubbling and toasted, remove it from the oven and let it rest for a few minutes.
  2. Garnish with fresh parsley if desired.

Notes

You can prepare the onions and cheese sauce ahead of time, stash them in the fridge, and bake when ready. Experiment with different cheeses for varied flavors.
