  • 4 large large onions (yellow or sweet)
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese (fresh) Not the jarred stuff—aim for fresh!
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme Optional, but highly recommended!
  • to taste Fresh parsley For garnish, because we all want to look fancy!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel the onions and slice them in half. Lay the halves cut-side down on a baking sheet.
Baking
  1. Bake the onions for about 30-35 minutes until they’re tender.
  2. In a medium bowl, combine the heavy cream, 3/4 cup of grated Asiago cheese, salt, pepper, garlic powder, and thyme. Stir until well mixed.
  3. Once the onions are soft, carefully flip them over. Spoon the creamy mixture generously over each onion half. Top with the remaining Asiago cheese.
  4. Return the onions to the oven and bake for another 20-25 minutes or until the cheese is bubbly and golden.
Finishing Touches
  1. Once done, sprinkle with fresh parsley before serving.

Notes

You can prepare the cheesy mixture a day ahead. Feel free to swap Asiago for another melty cheese like Gruyere or fontina if desired.
