  • 8 oz. spaghetti Any type of spaghetti will work.
  • 1 lb. boneless, skinless chicken breasts, diced Diced into small pieces for even cooking.
  • 2 tablespoons Cajun seasoning Adjust more or less according to taste.
  • 1 tablespoon olive oil For sautéing the chicken.
Vegetables and Flavorings
  • 1 bell pepper, chopped Use green, red, or any available variety.
  • 1 onion, diced
  • 3 cloves garlic, minced Add more for a stronger garlic flavor.
Sauce Ingredients
  • 1 cup heavy cream Can substitute with half-and-half or Greek yogurt.
  • 1 cup grated Parmesan cheese For added creaminess and flavor.

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. In a skillet over medium heat, drizzle olive oil and toss diced chicken with Cajun seasoning, salt, and pepper.
  3. Add seasoned chicken to skillet and cook until browned and cooked through, about 6-8 minutes.
  4. Add onion, bell pepper, and garlic to the skillet. Sauté for 3-4 minutes until vegetables are tender.
  5. Reduce heat to low, stir in heavy cream and Parmesan cheese, adding reserved pasta water to reach desired sauce consistency.
  6. Add drained spaghetti to the skillet and toss until the spaghetti is coated in the sauce. Optionally, sprinkle with fresh parsley.
  7. Serve and enjoy your creamy Cajun chicken spaghetti!

Notes

For lighter options, substitute heavy cream with half-and-half or Greek yogurt. Feel free to add any extra vegetables you have on hand, such as zucchini or spinach. For more spice, include cayenne pepper or hot sauce.
