Preparation
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breasts generously with salt and pepper.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the pan and set aside.
- In the same skillet, add the chopped onion and sauté until translucent for about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a simmer and reduce for a few minutes.
- Stir in the heavy cream and dried thyme. Taste and adjust seasoning if needed.
- Add the chicken back to the skillet along with spinach and mushrooms. Let it simmer for another 5 minutes until heated through and creamy.
Notes
Serve over rice or pasta, or with a side salad. Leftovers can be stored in the fridge for up to 3 days.
