Ingredients
  

Main Ingredients
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Fresh is preferred, but dried can be used.
  • 1 cup chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 1 teaspoon dried thyme
  • 1 cup fresh spinach Frozen spinach works too!
  • 1 cup mushrooms, sliced Optional, but recommended.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breasts generously with salt and pepper.
  3. Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. In the same skillet, add the chopped onion and sauté until translucent for about 3-4 minutes.
  6. Add the minced garlic and cook for an additional minute until fragrant.
  7. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a simmer and reduce for a few minutes.
  8. Stir in the heavy cream and dried thyme. Taste and adjust seasoning if needed.
  9. Add the chicken back to the skillet along with spinach and mushrooms. Let it simmer for another 5 minutes until heated through and creamy.

Notes

Serve over rice or pasta, or with a side salad. Leftovers can be stored in the fridge for up to 3 days.
