- In a large skillet over medium heat, add the olive oil. Once hot, toss in the chopped onions and sauté for 2-3 minutes until they soften and become fragrant.
- Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until browned all over, about 5-7 minutes.
- Add the sliced mushrooms and minced garlic to the skillet. Stir and let cook for another 3-4 minutes.
- Pour in the chicken broth and heavy cream. Stir well and let simmer for about 5-10 minutes until the sauce thickens slightly.
- Taste and adjust the seasoning if necessary. Sprinkle some fresh parsley on top.
- Serve it over pasta, rice, or homemade mashed potatoes.
Notes
You can substitute mushrooms with spinach or broccoli. Consider prepping chicken and veggies in advance. Blend the sauce for picky eaters or serve separately.
