Ingredients
  

For the Chicken and Dumplings
  • 4 cups cooked, shredded chicken Can use rotisserie chicken to save time.
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen mixed vegetables Peas, carrots, and corn are a classic combo.
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups biscuit mix
  • cup milk
  • to taste fresh parsley for garnish

Method
 

Cooking
  1. Heat a large pot over medium heat and add the olive oil. Sauté the diced onion until it's translucent, then add the minced garlic and stir for about 30 seconds.
  2. Pour in the chicken broth and heavy cream; add the cooked chicken and mixed vegetables. Sprinkle in the thyme, salt, and pepper. Stir together and let it bubble gently for about 10 minutes.
  3. In a bowl, combine the biscuit mix with the milk until just combined; it's okay if it looks a little lumpy.
  4. Drop spoonfuls of the biscuit dough onto the bubbling chicken mixture.
  5. Cover the pot and let it simmer for about 15 minutes until the biscuits and dumplings puff up and become fluffy.
  6. Garnish with fresh parsley and serve.

Notes

Using rotisserie chicken can greatly reduce preparation time. Feel free to swap mixed vegetables for any family favorites. This dish makes excellent leftovers when stored in an airtight container.
