  • 8 ounces your favorite pasta (fettuccine works beautifully)
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Because who doesn’t love the smell of garlic in the kitchen?
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Cheese makes everything better!
  • to taste Salt and pepper
  • Fresh parsley, chopped (for garnish)
  • Optional: vegetables like spinach or sun-dried tomatoes for an added twist

Method
 

Cooking the Pasta
  1. Start by cooking the pasta in a large pot of salted boiling water. Follow the package instructions until it’s al dente. Reserve about a cup of pasta water, then drain it and set aside.
Preparing the Chicken
  1. While your pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet heated over medium heat, add olive oil and sauté the chicken until it’s cooked through and golden brown, about 6-7 minutes on each side. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
Creating the Sauce
  1. In the same skillet, add garlic and sauté for about a minute until fragrant. Then, pour in the heavy cream, stirring continuously. Gradually mix in the Parmesan cheese.
Combining Everything
  1. Add the cooked pasta and sliced chicken back into the skillet. Toss everything together, adding reserved pasta water a little at a time until you achieve your desired sauce consistency.
Garnishing and Serving
  1. Sprinkle some fresh parsley on top for that pop of color and flavor. Take a moment to admire your masterpiece before diving in!

Notes

Pasta Perfection: If your pasta looks a bit sticky, a splash of olive oil or a bit of that reserved pasta water will work wonders. Veggie Boost: Sneak spinach or sun-dried tomatoes into the sauce for added nutrition. Feel free to experiment with mushrooms or lemon zest for a fresh twist.
