  • 1 lb boneless, skinless chicken breasts
  • 1 cup sliced mushrooms Button or cremini mushrooms work great!
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard The star of the show!
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • to taste Salt
  • to taste Pepper
  • Fresh parsley for garnish Optional, for color

Method
 

Preparation
  1. Season your chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
Cooking
  1. Add the chicken breasts and cook until golden brown, around 5-7 minutes per side. Remove them from the skillet and keep them warm covered with foil.
  2. In the same skillet, add the sliced mushrooms and sauté until golden and tender for about 4-5 minutes.
  3. Add minced garlic and sauté for another minute.
  4. Lower the heat, add the heavy cream and Dijon mustard, stirring until fully combined. Cook for another 2-3 minutes to thicken slightly.
  5. Nestle the chicken back into the skillet and spoon the creamy sauce over the top. Let it simmer for another 5 minutes.
  6. Plate up the chicken and garnish with fresh parsley.

Notes

For a twist, try different types of mushrooms like shiitake or oyster. Fresh herbs like thyme or rosemary can elevate the flavor. If the sauce looks lumpy, it's part of the cooking magic.
