Preparation
- Season your chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium heat.
Cooking
- Add the chicken breasts and cook until golden brown, around 5-7 minutes per side. Remove them from the skillet and keep them warm covered with foil.
- In the same skillet, add the sliced mushrooms and sauté until golden and tender for about 4-5 minutes.
- Add minced garlic and sauté for another minute.
- Lower the heat, add the heavy cream and Dijon mustard, stirring until fully combined. Cook for another 2-3 minutes to thicken slightly.
- Nestle the chicken back into the skillet and spoon the creamy sauce over the top. Let it simmer for another 5 minutes.
- Plate up the chicken and garnish with fresh parsley.
Notes
For a twist, try different types of mushrooms like shiitake or oyster. Fresh herbs like thyme or rosemary can elevate the flavor. If the sauce looks lumpy, it's part of the cooking magic.
