  • 2 lbs beef tips (chuck or sirloin)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 cup sliced mushrooms fresh or canned
  • 1 medium onion, chopped for flavor
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup sour cream (optional) for extra creaminess
  • Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Chop your onion and mince your garlic.
  2. In your crockpot, add the beef tips first.
  3. Layer on the chopped onions, garlic, and mushrooms.
Mixing Ingredients
  1. In a separate bowl, combine the cream of mushroom soup and beef broth.
  2. Pour this mixture over the beef and veggies. Sprinkle in some salt and pepper.
Cooking
  1. Cover your crockpot and set it to cook on low for about 6-8 hours or high for about 3-4 hours.
  2. Stir in the sour cream about 30 minutes before serving, if using.
Serving
  1. Once it's done, give it a good stir, garnish with fresh parsley, and serve over rice, egg noodles, or mashed potatoes.

Notes

For enhanced flavor, sear the beef tips before adding to the crockpot. This dish is also great for leftovers—store in an airtight container in the fridge.
