Method
Cooking the Pasta
- Boil a pot of salted water and cook the pasta according to the package instructions until al dente. Save a cup of pasta water for later.
Sautéing the Shrimp
- Heat olive oil in a large skillet over medium heat. Toss in the shrimp seasoned with salt and pepper, and cook until they turn pink and opaque—about 2-3 minutes per side. Remove from skillet and set aside.
Making the Sauce
- In the same skillet, add minced garlic and sauté for about a minute until fragrant. Pour in the heavy cream, bring to a simmer, and stir in Parmesan cheese until melted. Adjust the thickness with reserved pasta water as needed.
Combining Everything
- Add the cooked pasta and shrimp back into the skillet. Toss to coat everything in the sauce.
Garnishing and Serving
- Sprinkle with fresh parsley and serve immediately. Best enjoyed freshly made.
Notes
If you're not a shrimp fan, substitute with chicken or seasonal veggies. Adjust sauce consistency with pasta water as needed. Don't skimp on the garlic for maximum flavor!
