Ingredients
  

Pasta Ingredients
  • 8 ounces spaghetti or fettuccine or whatever pasta you have on hand
  • 1 pound shrimp peeled and deveined; fresh or frozen works!
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream because life’s too short for skim milk
  • 1 cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh parsley for garnish, optional

Method
 

Cooking the Pasta
  1. Boil a pot of salted water and cook the pasta according to the package instructions until al dente. Save a cup of pasta water for later.
Sautéing the Shrimp
  1. Heat olive oil in a large skillet over medium heat. Toss in the shrimp seasoned with salt and pepper, and cook until they turn pink and opaque—about 2-3 minutes per side. Remove from skillet and set aside.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté for about a minute until fragrant. Pour in the heavy cream, bring to a simmer, and stir in Parmesan cheese until melted. Adjust the thickness with reserved pasta water as needed.
Combining Everything
  1. Add the cooked pasta and shrimp back into the skillet. Toss to coat everything in the sauce.
Garnishing and Serving
  1. Sprinkle with fresh parsley and serve immediately. Best enjoyed freshly made.

Notes

If you're not a shrimp fan, substitute with chicken or seasonal veggies. Adjust sauce consistency with pasta water as needed. Don't skimp on the garlic for maximum flavor!
