Preparation
- Start by filling a large pot with salted water and bringing it to a boil.
- Once boiling, add in the gnocchi and cook until they float, usually about 2-3 minutes.
- While the gnocchi is cooking, heat olive oil in a large skillet over medium heat.
- Toss in the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream (or milk), stirring, and let it simmer gently.
- Add in crumbled feta, salt, pepper, and red pepper flakes if desired.
- Drain the cooked gnocchi and gently toss them into the creamy mixture.
- Plate the creamy gnocchi and sprinkle with fresh parsley before serving.
Notes
You can substitute feta with goat cheese or ricotta for different flavors. Kale or arugula can replace spinach. Store leftovers in an airtight container for up to 2 days and reheat gently with a splash of cream.
