  • 2 pounds russet potatoes, thinly sliced Starchy goodness for creamy texture.

  • 1 large onion, thinly sliced For caramelization.
  • 2 tablespoons butter For caramelizing the onions.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter. Add thinly sliced onions, sprinkle a pinch of salt, and cook slowly, stirring occasionally until golden brown (about 15-20 minutes).
  3. In a greased 9x13-inch baking dish, arrange half of the sliced potatoes at the bottom and season lightly with salt and pepper.
  4. Pour a cup of heavy cream over the potatoes, then sprinkle half of the caramelized onions and half of the Gruyère cheese on top. Repeat with remaining ingredients.
Cooking
  1. Cover the baking dish with aluminum foil and bake for 45 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the top is golden brown and bubbly.
  3. Let it cool for a few minutes before serving.

Notes

You can make these potatoes ahead of time by assembling and refrigerating the dish for up to 24 hours before baking. Store leftovers in an airtight container for up to 3 days.
