Preparation
- Preheat your oven to 375°F (190°C). If you’re using a store-bought pie crust, fit it into a 9-inch tart pan or pie pan and prick the bottom with a fork to prevent bubbling.
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
- Stir in the cheese, diced ham, and onions if you’re using them.
Baking
- Pour the egg mixture into your prepared pie crust. Bake for 35-40 minutes, or until the quiche is set and lightly golden on the edges.
Making the Hollandaise Sauce
- In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over (but not touching) simmering water and continue whisking until it thickens slightly.
- Gradually drizzle in the melted butter while whisking continuously.
- Add cayenne pepper if using, and season with salt.
Serving
- Allow your quiche to cool for a few minutes before slicing.
- Drizzle generously with hollandaise, garnish with fresh herbs, and serve.
Notes
Make-Ahead Option: You can prepare the quiche a day in advance, refrigerate it, and simply pop it in the oven the next day. Don't worry if the hollandaise sauce looks a bit lumpy; it can be blended smooth with an immersion blender. Feel free to mix in your favorite veggies like spinach, mushrooms, or bell peppers.
