Ingredients
  

For the Quiche
  • 1 pie crust 1 prepared pie crust (store-bought or homemade)
  • 6 large 6 large eggs
  • 1 cup 1 cup heavy cream
  • 1 cup 1 cup shredded cheese (Swiss, cheddar, or a mix)
  • 1 cup 1 cup diced ham You can use leftover ham from last night’s dinner
  • ½ cup ½ cup diced onions Optional but adds great flavor
  • to taste Salt and pepper
  • Fresh herbs (like chives or parsley) for garnish
For the Hollandaise Sauce
  • 3 large 3 egg yolks
  • 1 tablespoon 1 tablespoon lemon juice
  • ½ cup ½ cup unsalted butter, melted
  • a pinch A pinch of cayenne pepper Optional for some kick

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). If you’re using a store-bought pie crust, fit it into a 9-inch tart pan or pie pan and prick the bottom with a fork to prevent bubbling.
  2. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  3. Stir in the cheese, diced ham, and onions if you’re using them.
Baking
  1. Pour the egg mixture into your prepared pie crust. Bake for 35-40 minutes, or until the quiche is set and lightly golden on the edges.
Making the Hollandaise Sauce
  1. In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over (but not touching) simmering water and continue whisking until it thickens slightly.
  2. Gradually drizzle in the melted butter while whisking continuously.
  3. Add cayenne pepper if using, and season with salt.
Serving
  1. Allow your quiche to cool for a few minutes before slicing.
  2. Drizzle generously with hollandaise, garnish with fresh herbs, and serve.

Notes

Make-Ahead Option: You can prepare the quiche a day in advance, refrigerate it, and simply pop it in the oven the next day. Don't worry if the hollandaise sauce looks a bit lumpy; it can be blended smooth with an immersion blender. Feel free to mix in your favorite veggies like spinach, mushrooms, or bell peppers.
